Something delicious is happening in the Mill Road cafeteria. With input from Mill Road students, Assistant Cook Manager Frank McCann and Director of Food Services Larry Anthony are creating new dishes to delight students seeking vegetarian meal options. From veggie wraps and salads, hummus and soups, students have a growing selection of healthy options to choose from.
One goal of the new menu is to increase the nutritional value of all meals while keeping portion size consistent. For example, innovative new ingredients like locally-grown microgreens are being included because they are super-rich in nutrients.
As the growing season gets underway, some of the fresh ingredients for the elementary cafeteria will come from the Mill Road garden, enhancing the menu and giving students a chance to taste the products of their hard work as gardeners.
